Rice Cake Ice Cream Sandwich

This ice cream sandwich combines a few different low carb items to create an indulgent dessert that really hits the spot. Its a little high in total net carbs but you can tinker with it to make it work. Any low carb ice cream will do but we used Enlighten Sea Salt Caramel. The rice cakes are important to find small ones that are relatively low carb. These are from a local grocer and are 2 net carbs each (you could also do this open face and cut the carbs).

Ingredients

  • 2 small rice cakes
  • 1/4 cup low carb ice cream
  • 2 tsp peanut butter (organic - no sugar added)
  • 1 tbs Lilly's chocolate chips

Directions

  1. Scoop out ice cream onto 1 rice cake
  2. Flatten to cover the cake
  3. Drizzle peanut butter on top
  4. Add second rice cake
  5. Sprinkle chocolate chips around the edge
