Keto Bacon Egg and Cheese Sandwich

The bacon egg and cheese sandwich (BEC) is a classic breakfast especially after a night of a few too many drinks. In NY the BEC is almost an art form. Once on Keto I missed these things and just eating bacon and eggs separately didn't do it for me. This recipe gives you that bacon egg and cheese experience without the carbs. The Everything but the bagel seasoning really gives it some great flavor.

Ingredients

  • 2 eggs
  • 3 tbs almond flour
  • 1 tbs butter
  • 1/2 tsp baking powder
  • 2 pieces cooked bacon
  • 1 slice american cheese
  • Everything but the bagel seasoning

Directions

  1. Make Bread:
  2. Melt Butter
  3. Into a mug, mix 1 egg, almond flour, baking powder and butter.
  4. Sprinkle with seasoning
  5. Cook in microwave for 90 seconds
  6. Slice in half
  7. (Optional) griddle in a little more butter for some crisp.
  8. Assemble Sandwich:
  9. Fry the other egg (add salt and pepper)
  10. Add cheese after flipping the egg
  11. Add egg/cheese and bacon to bread
